NV vs Vintage Dates

I am not a huge Champaign drinker, however I have a few bottles in the cellar.

Does any know if NV campaigns cellar well?

Also, why is that they cannot put a vintage on the bottle? Do they mix year after year like one would with sour dough bread?

Just wondering.....
