About
the Wine About
the Wine Unrestrained Reserve
is a premium red blend of Cabernet Sauvignon, Cabernet Franc,
and Merlot from the Oak Knoll District of Napa Valley
appellation. This wine is specially crafted by David Yorgensen who hand-selected
his favorite barrels of these individual varietals, then blended together –
without ‘restraint’ as to either proportions of each varietal
in the vineyard or varietal designation – to create the best wine he
possibly can for each vintage based on how the varietals are showing in that particular
year. | |

Tasting Panel Notes
One of the unanimous favorites amongst the panel.
Although what would be definitely considered a “big” red
wine, surprisingly elegant with smooth silky tannins and not overly dense. Leans
more toward concentrated black fruit and earthy flavors being very rich in overall
style. Our group gave this wine several metaphorical comments that included –
sumptuous, sexy, lacy and seductive. Sounds like a great date!

Winemaker’s
Quote: “This
wine is dense purple in color, with a nose of concentrated notes of plum, dried
cherry, and currants accented by exotic notes of allspice and clove. The wine
shows fabulous fruit intensity, full-body, sweet, silky tannins, good, vibrant
acidity, and a stunning, seamless, long finish. The ’06 is our best effort
on this wine to-date.”

About the Wine About
the Wine The 2007
Reserve Chardonnay is completely barrel-fermented and is aged in 70%
new French oak barrels. The wine undergoes full malolactic fermentation and remains
in contact with the barrel lees for 18 months of barrel aging. These estate vineyards
are located in the Oak Knoll District of southern Napa
Valley. The climate here is ideal for Chardonnay with fog burning off
early, and the cooling influence of San Pablo Bay helping to moderate daytime
peak temperatures. The result is that natural acidity and the more delicate nuances
of varietal character are consistently preserved. | |

The adjectives were flowing freely on this wine,
but in a simple word, yummy! If you like big mouth feel Chardonnays with lots
of balanced fruit and oak, you’ll love this wine. We were all immediately
thinking of taking a bottle or two for our Thanksgiving meal and already tasting
the pumpkin pie. Not just another beautiful package, this bottle has it all in
a perfectly structured wine sure to please any of your guests. A perfect holiday

Winemaker’s
Quote: “Early
on this was a very balanced and structured wine from an outstanding ’07
vintage. Deep golden straw that hints at green orchard fruits. Viscous and creamy,
with mellow apple, honey and minerals. Long and creamy vanilla and butterscotch
coated oak finish.”
